Even nowadays, porters carry the food to the alpine huts in the High Tatra in the north east of Slovakia. Carrying provisions has a long tradition and it corresponds to the living culture which is marked by freedom and independency. Viktor Beranek is 56 years old, and today he is carrying 76 kilos of food from the valley 800 m up to the Rismy Chata – an alpine hut, located at an altitude of 2250 meters underneath the Rysmi, one of the highest mountains in the High Tatra. Viktor has been working there since 1977, during the last eight years as the host of the hut. Even if the meals are rather simple, they earn great respect especially considering that they have been carried up on risky self-constructed wooden frame-works. An important meal in the Rysmy Chata is the Slovakian version of a cabbage soup, a stew made of cabbage, meat, sausages and cream. The “Buchti” however, which is a kind of yeast dumpling, has to be prepared in the valley first before being brought up, since the yeast dough cannot be made at this altitude because of the compression ratio.
